Chicken Jalfrezi

Ingredients

0.52 cup butter
2.06 lb chick peas
8.94 lb chicken breasts
1.83 tbsp chili powder
4.81 lb Chopped tomatoes
0.34 cup coriander, ground
0.34 cup cumin, ground
11 clove garlic
3.67 tbsp ginger powder
2.75 unit lemon
0.34 cup Margarine
5.5 unit onions
8.25 unit Red Bell Pepper
5.5 pinch salt
0.34 cup turmeric, ground
0.69 cup vegetable oil

Directions

3/4 of spices/tomatoes/onions are for the chicken version, 1/4 are for the vegetarian version.

1. Heat the oil in a pan and fry the onion and garlic over a low to medium heat for 4–5 minutes, or until softened.

2. Mix the chilli powder, turmeric and salt together in a bowl until well combined, then add the chicken pieces and mix well to coat. Add the coated chicken to the pan and fry for 10–15 minutes, or until golden-brown and cooked through.

3. Stir the tomatoes, ginger, cumin and coriander into the pan, then reduce the heat until the mixture is just simmering. Cover the pan with a lid and cook for 20–30 minutes, stirring occasionally and adding a tablespoon of water every so often if the mixture appears too dry.

4. Stir in the butter and add the lemon juice, to taste. *Use margarine instead of butter in the lactose-free portion.

5. Serve with naan on the side.

For a vegetarian version:

Skip step two and add chick peas and chopped red bell peppers during step 3. Allow to simmer 20-30 minutes, until vegetables/chick peas are tender.

Oven Roasted Garlic Lemon Cauliflower

Ingredients

5.61 head cauliflower
3.3 tbsp garlic
0.41 cup lemon juice
0.82 cup olive oil
1.65 tsp pepper, black
1.1 tbsp salt

Directions

1. Preheat the oven to 500 degrees F.

2. Chop cauliflower into bite-sized florets.

3. Place the cauliflower florets in a roasting pan. Drizzle the olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper. Place the roasting pan in the oven and cook for 15 minutes, stirring occasionally to ensure even roasting. Remove from the oven and serve immediately while still warm
