cook red lentils until mashed. heat oil in a pan. add mustard seed, add methi seed When methi seeds brown and mustard seeds pop add asofoetida. Add turmeric. Add onion and fry. Add vegetables. Add salt and ~ half the sambhar powder. Cover cook on low heat. Heat water in another pan, add tamarind paste, add brown sugar add more sambhar powder add salt let it boil. Add mashed lentils to water add more sambhar powder let it boil again. Pour lentil water mixture into vegetables.
