Refried Beans and Eggs

Serves 4

Ingredients

4 egg(s) eggs
1.5 unit avocado
1 lb Refried beans
1 oz salsa
2 oz Shredded Cheddar - lowfat
1 clove garlic
1 tbsp lime juice
0.5 tsp cumin
0.5 tsp cayenne
1 tsp paprika
1 tsp salt
1 tsp pepper
1 tbsp garlic powder
1 tsp onion powder

Directions

If you have canned whole beans:
Heat beans over medium heat until boiling, add cumin, paprika, garlic powder, onion powder
Mash beans

If canned refried beans:
Heat, taste and add spices to taste

**** Totally fine to just scramble or do whatever is easiest for you

Fry eggs according to preference (sunny-side up or over-easy/medium preferred, scrambled eggs also works). Season with salt, pepper, garlic powder

Melt cheese over eggs as desired/ omit for lactose intolerant

Slice avocado/ mash into guacamole with lime juice, salt, cumin, cayenne, paprika, pepper, salt, minced garlic

Serve as eggs on beans, topped with salsa and guac, or salsa and avocado
