Bring a pot of water to a boil. Wash and slice tomatoes and boil them for a minute.
Beat eggs into a bowl. Season with soy sauce and white pepper then beat vigorously (with chopsticks - oh, alright, use your fork if you must) for a few minutes. This is a very important step!
Heat up 1 tbs/serving of oil in a pan, then pour in the beaten eggs, stir it around til about 70% cooked, remove and set aside. It should be fluffy and light!
Reheat the wok again then add the sliced tomatoes seasoned with a little salt and sugar, fry for a minute then return the partly cooked eggs and mix well.
Sprinkle some sliced green onions over and serve. Simplest recipe ever?
