Preheat oven to 325.
Mix oil and sugar, add egg and stir.
Add flour, baking soda, and salt. If desired, add a teaspoon of cinnamon.
Mash the bananas. Add into the mixture and pour into floured/waxed baking pan.
Bake for 1 hour--test with a toothpick to see if it's done.
*Recipe will yield three loaves of banana bread.
