Directions. Shuck the ears, removing silks, and then cut the kernels off the cob. You should have about 2 cups for each 4 servings. Juice the limes into small bowl or measuring cup. Mince the basil (a handful for each 4 servings).
1. Combine everything in a medium-sized bowl. (Begin with the smaller amount of olive oil (1T per 4 servings) and lime juice (2 tablespoons per 4 servings))
2. Toss gently so you don’t break the berries - just enough to combine.
3. Taste to adjust oil, lime juice, and possible tiny touches of salt.
