Serve pita, tzatziki, and arugula on their own.
Make a salad with the rest of the ingredients:
Dice the tomatoes and cucumbers. Chop the parsley. Place the diced tomatoes, cucumbers and parsley in a large salad bowl. Add the remaining ingredients and give the salad a gentle toss. Allow the flavors a few minutes to meld before serving. Enjoy!
