**FOR BEST RESULTS: prepare dressing at beginning of cookcrew period**
Prepare dressing by mincing the shallots then adding the first 5 ingredients to a jar (or mixing bowl) and shaking vigorously (or whisking) to combine. Taste and adjust flavor as needed, adding more balsamic for acidity, salt or pepper for flavor balance, or olive oil for creaminess. Set aside.
To serve, drizzle greens with a bit of the dressing and toss to combine. You can choose to add the pears and dried cherries (optional) to the salad or leave them on the side, but be sure to keep to walnuts separate (don't hurt the allergic DHers pls)!
