Chop cauliflower into ~1.5in florets. Add them to hot water and set aside ~4 min. Drain completely.
Cut potatoes into 3/4" cubes. Place in bowl of water. Set aside.
Mince ginger and garlic with oil to make ginger garlic paste. Set aside.
Heat oil in pan. Add cumin and ginger garlic paste.
Add onions and stir fry until transparent.
Add potatoes. Stir fry 3 minutes. Cover and cook until they are somewhat undercooked.
Add cauliflower and stir fry 3 min.
Add all spices and cook until the potatoes and cauliflower are fork tender.
Add tomato paste and oil as needed. Fry another ~3 min. Serve.
