Preheat the oven to 350F.
Dough: Mix half of the butter, 1/4 of the sugar, the vanilla extract, half the flour, and the egg(s) with an electric mixer for 2 minutes.
Spread out the dough evenly in a 13x9" pan and place in the fridge.
Applesauce filling: Mix the applesauce, lemon juice, and cinnamon.
Crumb topping: Mix the remaining flour, butter, and sugar together until crumbly.
Take the crust out of the fridge and spread the applesauce mixture evenly over it. Crumble the crumb topping mixture on top. Bake for 45 min.
Let cool. Add additional sugar on top is desired.
