1. Mince garlic. Place tofu blocks beneath a weighted plate for 15 minutes to remove excess water. Then cube tofu. Cut chicken into cubes.
2. Combine all ingredients except chicken and tofu in a large bowl. Remove 1/3 of contents to a separate bowl, add the tofu and toss well to coat. Add chicken to first bowl(s) and toss well to coat. Let stand for 20 minutes.
2. Place chicken into baking pan(s) and tofu into separate baking pan and cover all with foil. Bake at 400 for 15 to 20 minutes, or until chicken is no longer pink on the inside and tofu is heated through.
