1. Dice ham into bite-sized pieces
2. Lightly coat a 3-quart square baking dish with nonstick cooking spray.
3. Wash potatoes (peel if necessary). Use food processor and grate using the correct circular blade-thingy (DON'T USE GRINDER). Arrange potatoes evenly on bottom of dish. Then sprinkle with cheese, and chopped green onions. Keep ham separate.
4. In a bowl, combine eggs, milk, and 1/4 tsp black pepper.
5. Pour egg mixture over potato mixture in dish
6. Bake, uncovered, in a 350 degree oven for 45-55 minutes or until inserted knife near the center comes out clean. Let stand 5 minutes before serving.
7. Heat ham in a large skillet and serve on the side to add to eggs, if desired.
